Egg Fast Followup

A number of you have asked for an update on my egg fast, so here it is: I did nothing but eggs for two days, Monday and Tuesday of last week. I had four eggs per meal, three meals a day. Each of those days, I had them medium-boiled for two meals, and scrambled in 1/2 teaspoon of bacon grease for the third. This came to 6.7 grams of carb per day (eggs do have a tiny bit of carb in them) and fewer than 1000 calories. (I could look it up, but it stick in my mind it was 978.)

Sugar-Free Chocolate Meringues

These do have that cooling effect in the mouth that comes from erythritol, but we love 'em nonetheless. This is my first try at chocolate meringues, hence the "#1" designation.

Chocolate Meringues #1

3 egg whites -- at room temperature
1/8 teaspoon cream of tartar
1/2 teaspoon vanilla extract
1/2 cup erythritol
2 tablespoons cocoa powder

Preheat oven to 300. Line cookie sheet with baking parchment.

KC Oven Barbecued Beef Ribs

That Nice Boy I Married, who grew up in Johnson County, Kansas, verifies that this has a Kansas City sort of flavor.

KC Oven Barbecued Beef Ribs

1/2 cup KC Barbecue Rub (recipe below)
3 pounds beef spare ribs
1/2 cup water -- or light beer or chicken broth
1/4 cup olive oil
1/2 teaspoon molasses

Put half of your rub -- 1/4 cup -- in a bowl, and set aside.

Now sprinkle the rest of your rub all over the ribs, both sides. Place them in a roasting pan, stick 'em in the oven, and set 'er for 300.

Those of you who hang out on Facebook have probably been following this story, but I thought I ought to tell it here, too, so bear with me:

Stupid Ad I Missed

"Good Mood Food?" Arby's cheap roast beef sandwiches and curly fries will somehow bring warring factions together, and promote peace, love and understanding?

I particularly like the one where the cute young man tells us that up till now, we've eating Angus beef (what is it with Angus beef, anyway?) the way "the man" wants us to, but now we're going to eat it our way, or something. 'Cause eating a cheap sandwich of what I suspect is ground and re-formed beef is sticking it to "the man," and a great way to express our individuality.

Yummy New Way To Serve Burgers

I was debating whether I should try this tonight, or just thaw out one of the freezer full of low carb slow cooker dishes I've got down in the cellar. When I described this idea to That Nice Boy I Married, he said, and I quote, "That."

So I took about a pound of ground chuck, and made it into two big burgers, about an inch thick. Put them in a heavy skillet over medium-low heat, so they'd get done enough in the middle before the outside was overdone.

Ads That Are Currently Tweaking Me

As long-time readers are aware, I have a mild obsession with food ads. I find myself analyzing them, even yelling back at them. Here are some food ads that are currently pinging my bullsh!t meter:

V8 V-Fusion: Funny how Nature just knows how to make things that are good for you. Uh-huh. Sure. Like, I dunno, typhoid and cholera bacteria. Rattlesnake venom. Tobacco. Parasites. Deadly nightshade.

Fritta-fle Lorraine

I have a truly ridiculous egg supply right now, what with my chickens going nuts with the lengthening days. So I figured an egg-based supper was in order. I came up with this hybrid between a Quiche Lorraine (the Swiss cheese/bacon thing), a frittata (the cooked in the skillet on the stove top, then under the broiler thing) and a souffle (the beat it till a bunch of air gets incorporated, so it puffs thing). Way yummy, and lower carb than a classic quiche, because there's no crust, and lower carb than a classic souffle, because there's no flour-thickened white sauce.

"Turbo Low-Carb"

So we're at the grocery store, That Nice Boy I Married and I, picking up cocoa powder and cream of tartar so I could try making chocolate meringues. At the checkout there's the usual array of magazines, and on the cover of Women's World, one of the more inane of the women's magazines -- you know, one of the ones where nearly every headline throughout the magazine ends with an exclamation point: "Super-Easy, Super Delicious Family Suppers!" "Sense Your Way To Success!" Take The Work Out of Working Out!" Etc. The biggest, splashiest headline of all read TURBO LOW CARB!

Pork Steaks with Ranch Dip

Wanted to do something new and very low carb with pork steaks tonight. This is what I came up with. The dip would be great for any Ranch Dip-py purposes; to use it as a salad dressing you might thin it out a bit with heavy cream or water or something.

Pork with Ranch Dip
1 pound pork shoulder steak
2 tablespoons liquid Barbecue Smoke®
1/2 tablespoon bacon grease
Salt and pepper
Ranch Dip (recipe below)

Hash Browns With Eggs for Supper

So I did a simple supper tonight, taking advantage of our ridiculous surplus of eggs. I peeled a turnip and 1/4 rutabaga I had in the fridge and whacked 'em into chunks about 1/2" x 1". Threw them in my microwave steamer (a hugely useful item), added a little water, covered them, and gave them 10 minutes on full power.

Will Compact Fluorescents Screw Up Your Blood Sugar?

I got into a discussion of light bulbs, of all things, on Facebook. A woman named Karen mentioned that, along with their other faults, compact fluorescents -- you know, twisty bulbs -- may raise blood sugar. (The word she used was "purported" -- ie, she was careful to let me know that she wasn't asserting this as proven fact.)
